Easy Apple Butter Thumbprint Cookies

One of the only silver linings of this whole pandemic situation is that Nabol and I have rekindled our love for recipe development. When you have extra time in your hands and a kitchen pantry full of ingredients, what else can you do? It’s the ideal scenario to get creative in the kitchen. Plus, you can prep a bunch of meals in advance to use throughout the week.


Baking especially is one of those things that we’re not great at, but our cravings for certain baked goods have pushed us to roll our sleeves and keep improving our techniques. That’s how our latest thumbprint cookie recipe was born.

I recently ordered honey and fruit butters from Honeyville, our favorite beekeeping business in Durango, CO. And I was envisioning some sort of cookie or scone made with their famous apple butter. To my surprise, these are probably the easiest cookies that I’ve ever done - and from the first try too!

You guys can use any kind of butter or jam too. We even made a couple with peanut butter and chocolate that were amazing. If you make them at home, let us know what you think.


Apple Butter Thumbprint Cookies
  • 1 ½ Cups of all-purpose flour
  • ½ Cup of powdered sugar
  • 1/2 Tablespoon of orange zest
  • 1 Spoonful of your favorite apple butter
  • 1 Stick of butter
  • 1 Egg yolk
  • 1 Pinch of salt
  • Apple butter
1. Combine all of the dry ingredients and slowly incorporate the room-temperature butter, the eggs and the remaining ingredients.

2. Use your hands to mix the ingredients and make the dough.

3. Form a log and wrap it into a cling film. Keep in the fridge for at least 45 minutes.

4. Preheat the oven to 350 degrees.

5. Cut the dough to make small balls and use your thumb or the back of a round measuring teaspoon to make a hole in the cookie.

6. Fill with your cookies with a little apple butter. (Or any filling you like)

7. Bake on a greased baking sheet for about 12 to 15 minutes depending on your oven and the size of the cookies. The cookies should have a lightly golden bottom but will remain slightly soft. (They will harden a little bit once they cool off.)

8. Wait at least 20 minutes before you eat these.
