Leftover French Fries Spanish Tortilla

Before you roll your eyes, this is a thing in Spain. Yes... They even make tortillas out of the potato chips you get in a bag. We also thought our friend Luis from Madrid was a bit crazy until we tried it for ourselves. And it works! It's not only super tasty, but it also happens to be the perfect recipe for the #LeftoverChallenge happening on Youtube in support of struggling restaurants during the pandemic.


If you’re not familiar with Spanish tortillas, these are the delicious omelettes that are a centerpiece in many tapas bars. They are traditionally made with eggs and potatoes, optionally onions too. The potatoes are commonly poached in oil and then used to make the tortilla.

But it is also a great way to repurpose leftover potatoes from another meal – even your fast-food fries will work! However, we have to say that we did use the fatter, less crunchy version of French fries that we got at a local chicken place, Harold’s. And we’re not exactly sure if the thinner, crispier McDonald’s fries would work as well. So… you’ve been warned! Haha

Depending on how much leftover fries you have, that’s the number of eggs that you’ll use. We had the equivalent of 2 cups of fries, so we used 4 eggs. Keep that in mind when adjusting this recipe. Now let’s get to cooking!

Spanish Tortilla with French Fries
  • 2 Cups of leftover French fries, cut into pieces
  • 4 Eggs
  • ½ Cup of finely chopped onion
  • Olive oil
  • Salt and pepper to taste
1. Coat the bottom of your non-stick pan with a thin layer of olive oil. Sauté the onions until translucent before adding the room-temperature fries. Toss a few times and cover for a couple of minutes.

2. Whisk your eggs and pour them over the fries. Salt and pepper to taste. (If the fries were previously salted, don’t use as much salt.) Keep your burner at medium heat.

3. Use a rubber spatula to carefully lift the corners of your tortilla until some of the uncooked egg goes under.

4. Once the eggs are mostly cooked, slide your tortilla onto a serving plate. Place another plate on top and flip. Place the tortilla back on the pan with the uncooked part down. Cook for another minute or so. Voila!
